Blueberry Lemonade Margaritas Delish Header - Woman Holding it with red nails

We can’t think of anything that could be more fun than bringing out trays of pretty Easter cocktails at a party. Since it’s usually not common to associate Easter with “cocktails”, we’re hoping to change your mind. And sure, the majority of Eastertime revolves around the children having fun (and the adults tidying up), but we believe grown ups deserve a little fun, too!

The following pretty Easter cocktails are certain to have you feeling the Easter spirit.

Boozy Brazilian Lemonade

Concocted by none other than Jamie Oliver, this pretty Easter cocktail recipe will have you and your friends dancing into the wee hours of the morning. Easter is all about celebrating, after all.

1/4 cup (55g) caster sugar
6 limes, plus finely grated zest of 1 lime
1L (4 cups) soda water
Juice of 5 lemons
1 cup (250ml) Cachaca or white rum
1 bunch mint, leaves picked
1 green jalapeno chilli, seeds removed, finely chopped
1/3 cup (75g) demerara sugar
Crushed ice, to serve

Whiz coconut milk and caster sugar in a food processor until sugar dissolves. Transfer to a jug and set aside.

Step 2
Roughly chop 5 limes, then add to food processor and whiz until broken down.

Step 3
Stir the lime puree into the coconut mixture. Strain through a sieve into a serving jug.

Step 4
Add the soda water, lemon juice and rum, and stir to combine.

Step 5
Chop three-quarters of the mint leaves. Place in a mortar with the chilli and lime zest, and pound until well combined. Stir through the demerara sugar and place on a plate.

Step 6
Slice remaining 1 lime in half. Using 1 lime half, rub the rims of serving glasses, then dip rims in sugar mixture.

Step 7
Slice the remaining lime half. Fill glasses with ice and pour over cocktail. Garnish drinks with lime slices and remaining mint.
